Tuna Bacon (Browne Trading Co., 207-775-3118): $36 per pound. Cured with herbs and spices, then cold smoked, Browne’s tuna bacon isn’t exactly right for eating alongside plain old scrambled eggs. Chefs at Manhattan’s Sea Grill restaurant serve it wrapped around fish fillets. PERI’s favorite recipe: sautE and crumble over salad.

Salmon Pastrami (Homarus, 800-23SALMON): $39.75 for 1.3 pounds, delivered FedEx. Coated with peppercorns, garlic and coriander, this smoked Norwegian salmon smells just like pastrami (but tastes a lot like lox). Just ask the Plaza Hotel or Windows on the World. Layer the pricey cold cut on bagels or toss slivers in an Alfredo pasta.

Duck Prosciutto (D’Artagnan, 800-327-8246): $25 per pound. Those gourmands in the U.S. Senate dining room already chew on duck prosciutto between votes. OK, it’s a bit overpowering on its own, but why not try a little smoked fowl sliced with fresh melon or pears, or on a baguette with goat cheese? Mmmm.

Monkfish Pate (Browne Trading Co.): $28 per pound. The ““poor man’s lobster’’ goes upscale. This foie de lotte (yes, monkfish liver) isn’t very spreadable–serve sliced on crackers. Warning:not for those who don’t like liver, fish or both.
